The main feature of this brewery, this sake is made using underground water from inside Yame, and polished rice, up to 38% of which is Yamada Nishiki. This daiginjo has a mellow, full-bodied aroma and a strong umami taste. Best served chilled, this is a sake that goes great with sashimi and plain flavored appetizers.
