This brewery, having revived the top quality sake rice "Kame no O" that had all but disappeared in the post-war period, has produced sake using "Jugemu", a rice perfectly suited for the brewing process, which is made in Fukuoka through cross fertilizing "Yamada Nishiki" rice with "Yumeikkon" rice.
The supple, smooth nature of the sake, has a mature slightly sour taste, which is simply irresistible.
